To many, the start of a new year represents a clean slate and new possibilities, igniting our reflective side and a desire to improve our well-being. One way to get a fresh, invigorating start to the new year is by adding some extra greens to your everyday routine. That’s why we asked certified Holistic Nutritional Therapist, founder of Green Kitchen Stories and cookbook author, Luise Vindahl, to share her favourite juice recipes with us. She has made four delicious recipes for us that are sure to invigorate your mind, body and taste buds.

Throughout Luise’s journey of experimenting with nourishing, vegetarian recipes, she has discovered how juicing presents a simple and easy way of improving energy and hydration. Packed with nutrition, juices are easy for the body to digest and absorb, providing you with a lot of beneficial sustenance: “Homemade vegetable and fruit juices are filled with vitamins, minerals, phytonutrients and antioxidants, and they also represent a great way of adding a high concentration of anti-inflammatory nutrients to your diet,” Luise shares. This is also why she enjoys concocting juices with her own family of five: “It’s one of those healthy habits we just cannot live without. It’s highly addictive and it’s fun to make together”.

According to Luise, juicing presents the perfect ritual that will help anyone to get a fresh start to the new year after a long, cold holiday season. By drinking a delicious, colourful glass of homemade juice, you’ll get everything you need to recharge both your body and mind. Rather than focusing on restricting or constraining, this fresh addition represents a healthy, fun and delicious habit that you can add to your weekly routine and practice both alone or together with your family.

“I usually make larger amounts of juice at once. I pour the juice into airtight bottles that I store in the fridge, making it easy for me to take it on the go, and limiting the time I have to spend on preparing the juice each week"

 

To help you make a fresh start to your new year, Luise has created four colourful juice recipes that are packed with nutrition, have great anti-inflammatory properties, and will boost your immune system, leaving your body energised and hydrated.

 

 

 

Pineapple Green Juice

Makes 500 ml

This is Luise’s go-to, daily dark green juice. A deeply nutritious juice with pineapple, providing it with beneficial anti-inflammatory properties.


Ingredients:
1 cucumber
5 celery stalks
2 handfuls of spinach
1 small bunch of lacinato kale, also known as dinosaur kale
1 large knob of ginger
1/2 a pineapple, peeled

Instructions:
1. Wash all ingredients thoroughly.
2. Cut each ingredient into the appropriate size for your juicer.
3. Juice all ingredients.
4. Stir juice with a spoon to mix all ingredients.
5. Pour into glasses and serve.

 

 

Beet, Fennel & Lemon Juice

Makes 500 ml

With sweet apples, antioxidant rich beetroot and fresh fennel which has a delicious taste reminiscent of liquorice, this juice tastes magically.


Ingredients:
2 large, fresh beetroots, peeled
1 lemon, peeled
1 large knob of ginger
1 large fennel bulb
2 apples, cored

Instructions:
1. Wash all ingredients thoroughly.
2. Cut each ingredient into the appropriate size for your juicer.
3. Juice all ingredients.
4. Stir juice with a spoon to mix all ingredients.
5. Pour into glasses and serve.

 

 

Carrot, Turmeric & Grapefruit Juice

Makes 500 ml

Combining the sweet taste of the carrots and oranges with the bitterness of the grapefruit and the spicy kick from the fresh turmeric and ginger, this juice is just as delicious as it is nutritious.


Ingredients:
6 carrots
1 large knob of turmeric
1 large knob of ginger
2 oranges, peeled
1 grapefruit, peeled

Instructions:
1. Wash all ingredients thoroughly.
2. Cut each ingredient into the appropriate size for your juicer.
3. Juice all ingredients.
4. Stir juice with a spoon to mix all ingredients.
5. Pour into glasses and serve.

 

 

Herby Green Juice

Makes 500 ml

A uniquely refreshing juice with a subtle twist provided by the fresh parsley and mint.


Ingredients:
1 handful of fresh parsley
1 handful of fresh mint
1 large handful of spinach
1 lemon, peeled
1 large knob of ginger
1 cucumber
1 apple, cored

Instructions:
1. Wash all ingredients thoroughly.
2. Cut each ingredient into the appropriate size for your juicer.
3. Juice all ingredients.
4. Stir juice with a spoon to mix all ingredients.
5. Pour into glasses and serve.
